Modified from a recipe in the New Zealand Herald, 1997
- Fresh Green Beans
- 1/2 cup (packed) chopped Basil leaves
- 1 Tb Lemon Juice
- 1 small clove Garlic, crushed
- Freshly ground Black Pepper
- 1/4 tsp Salt
- 4 Tb plain Yoghurt (or cultured Buttermilk)
- Cook the beans until just tender and still slightly crisp.
- Drain the beans.
- Chop Basil leaves finely and place in a small bowl
- Add the remaining ingredients and mix well.
- Pour over the beans and serve soon.
