Vegetable — Green Beans with Basil and Yoghurt Dressing

Modified from a recipe in the New Zealand Herald, 1997

Serves 2


  • Fresh Green Beans
  • 1/2 cup (packed) chopped Basil leaves
  • 1 Tb Lemon Juice
  • 1 small clove Garlic, crushed
  • Freshly ground Black Pepper
  • 1/4 tsp Salt
  • 4 Tb plain Yoghurt (or cultured Buttermilk)


  1. Cook the beans until just tender and still slightly crisp.
  2. Drain the beans.
  3. Chop Basil leaves finely and place in a small bowl
  4. Add the remaining ingredients and mix well.
  5. Pour over the beans and serve soon.
